“Green New Deal” Smoothie (Vegan)

Spring is coming and schedules are starting to fill up. The ice caps are melting and our capacity for environmental degradation won’t stop until we drain the world’s oceans in order to find and kill God. Keep yourself feeling refreshed with a healthy, vegan smoothie. Makes enough to share with the whole Squad.

Ingredients
Mint- 3 full Sprigs with stems
Curly Kale, washed. (2 full leaves, loosely chopped) or Spinach (1 cup, raw)
Banana (whole)
Raw Unsalted Cashews (⅓ Cup)
Vanilla extract or paste (1 TSP or To Taste)
Water or Milk Alternative of Choice (I use Oat Milk) (1.5 cups)
Agave Syrup (1 TBSP or TT)
Ice (1.5 cups)

Add Cashews and ½ Cup of Water or Milk Alternative to Blender. Blend on High until cashews start to blend smoothly. Add Kale and rest of Water/Milk Alternative until blended. Add Mint. Add Banana, Agave Syrup, Vanilla. Add Ice at end to finish, ½ cup at a time. Check for sweetness, add more agave or vanilla to your liking and blend once more for 5-10 seconds to finish. Drink straight out of blender to save time on dishes.

“Spice Up Your Life” Cake (Vegan)

An original recipe from an Austin, TX ROP member. 

Ingredients
3 cups AP flour
1.5 cups sugar
1 tsp baking soda
1 tsp salt
1 tsp ground ginger
1 tsp cinnamon
½ tsp cardamom 
¼ tsp coriander
2 cups cold water
1 cup olive oil
1 tbsp vanilla extract
4 tbsp apple cider vinegar

Preheat oven to 350°, line a round 9” pan with parchment paper and non-stick spray, set aside until needed. In a large bowl combine flour, sugar, salt, baking soda, and spice mix, whisk until dry ingredients are incorporated. In a separate bowl combine water, olive oil, and vanilla extract, whisk until emulsified. Create a well in the center of the dry ingredients before adding the wet ingredients. Use a spatula to fold ingredients together until well incorporated. Add apple cider vinegar to cake batter and stir to incorporate into batter. Pour cake batter into pan and bake for 25-30 minutes*. Allow the cake to cool before removing from pan and icing.

*to test if cake is done insert a toothpick in the center of the cake, if the toothpick is clean upon removing, it is ready! If not, allow to bake for 5 minute intervals until toothpick is clean.
